Sure, you know Napa, Bordeaux and Tuscany—but what about Central Otago, Sussex and Millahue? When it comes to wine, some regions simply enjoy broader renown than others. And while we love Sonoma and its Chardonnay as much as the next oenophile, what’s true of wine is also true of travel itself: Trying new things is half the fun.

To nudge you out of your comfort zone, we’ve harvested eight distinct stays in lower-profile wine regions around the world. Some, like The Lake House on Canandaigua in New York, enjoy proximity to major wine trails, while others, such as Vik Chile, have their very own vineyards on-site. What unites them is style, service and the promise of excellent wine. And we can all cheers to that.

    Four Seasons Hotel Hampshire
    Hampshire, England

England and wine? A surprisingly delightful pairing. Use this Georgian manor house outside of South Downs National Park as a base to sample local white and sparkling wines. Back on property, which spans 500 acres of bucolic countryside, recently redesigned guest rooms at Four Seasons blend elegance and comfort, while the signature restaurant celebrates Britain’s rich culinary heritage and the spa offers facials by Dr. Barbara Sturm. Guests can even look forward to pastoral pursuits like archery, horseback riding and clay pigeon shooting.

    The Lake House on Canandaigua
    Canandaigua, New York

You don’t have to choose between water and land at this Finger Lakes resort. Go sailing, kayaking or canoeing—then explore the 30-mile Canandaigua Lake Wine Trail. This is a place where city slickers from New York, Boston, Toronto and beyond come to experience a slower pace of life and be reminded of what really matters: beautiful design (rooms include hand-carved furniture), great food (the on-site tavern serves a knockout rib eye), relaxation (don’t miss the outdoor barrel saunas at the spa) and a perfectly chilled glass of Riesling.

    Gibbston Valley Lodge & Spa
    Gibbston, New Zealand

Two national parks neighbor this Pinot Noir–growing perch in New Zealand’s Central Otago region. You could visit them, ask the expert concierge team to plan a day for you in nearby Queenstown or simply stay put and sip complimentary bubbly at the spa. Each of the 24 spacious villas comes with a secluded courtyard overlooking the vines, plus a selection of Gibbston Valley wines curated to your preferences. There’s also a fantastic restaurant on-site that serves dishes starring sustainable ingredients like salmon from Rakiura and alpine venison.

    Beau-Rivage Palace
    Lausanne, Switzerland

The Swiss export only about 1% of their wine, so the best way to sample some is to hop on a flight to Geneva (GVA) and try it where it’s made. Base your stay at Beau-Rivage Palace overlooking Lake Geneva. The grand hotel is right down the road from the terraced vineyards of renowned wine region Lavaux, known for producing crisp, mineral-rich whites such as Chasselas. Visit a winery for a tasting, then head back to the hotel to stroll the sprawling private park, relax by the swimming pool or enjoy a seven-course dinner at the exquisite restaurant.

    Gran Hotel Mas d’en Bruno
    Torroja del Priorat, Spain

Housed in an 18th-century farmhouse, this 24-key Catalonian estate is as sumptuous as the red wines of the surrounding Priorat region. Rooms feature marble bathrooms, original beamed ceilings and sweeping views of the vineyards; most even have fireplaces. When you’re not cozying up in yours, try a yoga class with a view of the vines, join a sommelier’s master class or enjoy the tasting menu with wine pairings at the signature restaurant, Vinum, which remains one of the area’s best tables to book.

    Vik Chile
    Millahue, Chile

The wine hotels of South America offer fantastic design, exceptional dining and some of the most breathtaking views you’ll find anywhere—and this Vik outpost two hours south of Santiago is no exception. Clad in undulating titanium and bronze panels that reflect the dazzling Chilean sunlight, the Cachapoal Valley compound reads more like a spaceship than a wine-country retreat (until you take a dip in the spa’s over-the-top wine bath, that is). The surrounding vineyard, visible through floor-to-ceiling windows in the spacious suites and glass-walled bungalows, might also give things away.

    El Cielo Resort
    Ensenada, Mexico

Strategically located along the Valle de Guadalupe wine route, El Cielo Resort is the ideal place to experience Mexican wine. You can take a wagon tour through the rolling vineyards and olive groves surrounding the hotel—or admire them from afar, over lunch at Baja-Yucatán fusion restaurant Latitud 32. Afterward, partake in a “Build Your Own Wine” offering, during which a guide will explain the individual characteristics of the property’s various grapes and help you create your very own vintage.

Tsinandali Estate, A Radisson Collection Hotel
    Tsinandali, Georgia

Georgia’s winemaking tradition dates back 8,000 years. While this property outside of Tbilisi isn’t quite that old, it does have its own vineyard, plus a rooftop infinity pool. Rent one of the house bikes and go for a ride through the remote Georgian countryside, then retreat to the on-site Gaumarjos Wine Bar, where you can sample some of the top wines in the region. For an authentic meal, try the hotel’s signature restaurant, Prince Alexander, which serves many of Georgia’s famously meaty dishes alongside more of those delicious wines.
