      At this time of year, our daydreams naturally drift to all things European: crystalline waters lapping rocky shorelines, a café au lait in a shady town square, the smell of pine trees on a Mediterranean breeze at dusk. The continent is endlessly alluring and, this summer, there are a slew of equally beguiling new hotels to match—some in perennially popular destinations, others in unsung and emerging destinations.

      Our picks of the best new hotels for your Euro summer include a peaceful former convent, chic beach hideaways and a restored palazzo steeped in history. These fresh properties will allow you to rest, recuperate and explore sides of Europe that the majority of the summer hordes miss. So get ready to dream up—and book—that European summer vacation.

       

      Hotel Le Dune Piscinas
      Sardinia, Italy

      We get why Sardinia is so popular—it’s an island full of fascinating ruins surrounded by turquoise waters that also gives us pecorino cheese—but, lately, some parts are just too busy. That’s not the case on the Costa Verde, where some of Europe’s tallest sand dunes stretch for miles and Hotel Le Dune Piscinas offers a crowd-free sanctuary across fewer than 30 rooms. Here, joy lies in completely unplugging (think: roaming the sand instead of scrolling your socials). There are three dining options offering Sardinian specialties, including a local pasta known as malloreddus, but don’t miss the adults-only Maestrale, where raw seafood is served at sunset on the sand.

      Palazzo Durazzo Suites
      Genoa, Italy

      Genoa often gets overlooked for Venice or nearby Portofino, but it’s a beguiling city with a long history of maritime trade, packed with palaces and winding alleyways known as caruggi. Palazzo Durazzo Suites sits between the harbor and those endlessly explorable passages in the medieval section of town. There are just 12 suites in the 16th-century building, some with 18th-century frescoes and all, crucially, with air-conditioning. Breakfast sets the scene here, a generous spread of cured meats, eggs, house-made cakes and panera (a Genoese coffee semifreddo) that’ll prepare you for a day exploring the city’s shops, churches and restaurants.

      One&Only Kéa Island is a little different from most Greek hotels. A series of 63 private villas constructed from local stone and scattered on a hillside, each with an infinity pool overlooking the Aegean, it’s reachable from the mainland only by speedboat, ferry or helicopter. Once here, O&O’s signature brand of luxury, plus the resort’s sense of seclusion (despite being less than an hour from Athens), will swiftly usher you into vacation mode. Days start with a breakfast of fresh figs, cheese, honey and Greek yogurt, and end with just-off-the-boat fish and octopus in an elevated taverna atmosphere. How you spend the time in between is up to you: work out or relax in the huge gym and spa, explore archaeological sites with a private guide or just chill by the pool.

      Crete, Greece

      JW Marriott made its Mediterranean debut last summer in Crete on a pretty stretch of coastline overlooking the Aegean Sea. All 160 rooms, suites and villas capitalize on the location with sweeping views of the water; snag one with an infinity pool if you really want to make friends back home jealous. The natural world is woven throughout the property, from the groves of olive and carob trees to the roofs planted with lavender and thyme; chefs even pluck produce from the kitchen garden. And three separate pools allow for kid-friendly antics as well as adults-only relaxation.

      Occupying a lesser-known stretch of Spain’s Costa del Sol, Fairmont La Hacienda’s rooms, suites and 47 villas all have views of the shimmering sea. Dalmar restaurant serves fine dining from Spanish whiz kid Benito Gómez (of renowned restaurant Bardal), with a rotating menu that includes grilled avocado and sea bass cured in seaweed, but the more casual El Faro La Hacienda and Umbra serve equally appealing Mediterranean delights in alfresco settings. For golfers, two championship courses offer views of Gibraltar and even Africa on a clear day, and for beach bums, there are several miles of pristine sand.

      Gran Marbella Resort & Beach Club
      Marbella, Spain

      Andalusian culture permeates this new beachfront resort in the heart of the Costa del Sol, from the private, riad-like courtyards and Moorish architectural motifs to local flamenco demonstrations and olive oil tastings. Opened in summer 2025, the shiny spot offers 135 bright and airy rooms, many overlooking the tranquil Real de Zaragoza beach. Head to Amù Beach Club to while away a glamorous afternoon with cocktails by the infinity pool; as golden hour approaches, it becomes quite the scene. If you can tear yourself away, the Sierra de las Nieves mountains promise spectacular hiking.

      Dunas de Formentera
      Formentera, Spain

      If Ibiza is the party animal of the Balearic Islands, Formentera is its quiet cousin, a place for slowing down and tuning out. And Dunas de Formentera is the perfect spot to do just that. The highly sustainable resort—it’s powered by renewable electricity, uses produce from local suppliers and helps regenerate surrounding marine life—has 45 breezy rooms and suites a few steps from the white sands of Migjorn Beach. At the alfresco Dunas Restaurant, diners can choose from dishes like Iberian pork ravioli and Carabinero prawn spaghetti, followed by goat cheesecake with oxheart-tomato jam. Formentera is accessible only by boat (30 minutes from Ibiza or a few hours from Mallorca or Alicante), but it’s very much worth the trip.

      Hôtel du Couvent
      Nice, France

      Housed in a 17th-century convent surrounded by fig and orange trees, this tranquil spot is worlds away from the Côte d’Azur’s jet-setter scene. Here, in the middle of Nice’s Old Town, guests forgo lively beach clubs for three quiet restaurants, including an open-air bistro, and a long lap pool with views of the city. Each suite has a dedicated butler, and guests are welcomed with sparkling wine and a madeleine, setting the tone for a very different kind of French Riviera stay. 

      COMO Le Beauvallon
      Saint-Tropez, France

      If you’re looking to do Saint-Tropez in style this summer, there are few better places to stay than the brand-new COMO Le Beauvallon. Set in a striking Belle Époque estate dating back to 1914, the property includes 42 rooms and suites, several acres of gardens and a mosaic-tiled pool. The best feature, though, is the private floating dock. From here you can take an eight-minute boat ride to the heart of town or zip over to an iconic beach venue like Le Club 55 or Bagatelle St. Tropez. Back at the hotel, the COMO Shambhala spa awaits, as does Beauvallon Sur Mer by Yannick Alléno restaurant, where the celebrated chef serves a tempting blend of Provençal and Asian flavors.

      Bodrum, Turkey

      With 294 rooms, suites and villas across 28 acres—plus six pools, nine restaurants (including Spago by Wolfgang Puck) and six bars—Maxx Royal Bodrum is not a boutique hotel. But it offers a personalized experience to every guest, right down to a choice of pillows and a fragrance menu in each room. That level of care carries through to the kids club, Maxxi Land, where children can choose their own adventure in a beautifully designed space that includes a workshop, stage, movie theater and dedicated restaurant serving nutritious meals. Parents, meanwhile, will love the nearly 50,000-square-foot spa packed with the latest in longevity. Bodrum is just 30 minutes away.
