      Renaissance man Adam Hess has filled these and other roles over the course of his career. The newest venture on his resume? All American Grub, a food truck in and around Knightstown, Indiana.

      Since its May 2025 launch, All American Grub has booked everything from company parties to a national yard sale. He recently added a staff member: his mom.

      All American Grub serves up fried chicken sandwiches, cheeseburgers and much more in the way of comfort food. His secret Grub Sauce is indeed secret. (“I won’t even tell my mom what’s in it.”)

       

      A career on wheels

      Adam can talk to anyone. One day, he struck up a conversation with the owner of a hot dog stand. It was parked outside a big box hardware store, where Adam was sourcing materials for a construction job.

      “Is there any money to be had in this?” he had asked the vendor, who confirmed there was.

      Adam had a bad back. He’d been looking for something less taxing on the spine than construction. Could this be it?

      Adam was intrigued enough to buy a 1976 pull-behind, tearing down the frame to refurbish it. Yes, this was construction, but also a way out of construction. Nothing would give him freedom like a career on wheels.

      This entrepreneur built his business literally.

       

      “Everything is so easy”

      Adam has always traveled a lot, even before the truck. In 2007, he switched from a local bank to Chase so he could bank while on the road.

      “I love Chase so much,” he said. “Everything is so easy, from the personal to the business banking. I love that I can deposit checks without having to go to the bank. Getting the truck loan through Chase was easy, and I love that merchant services can show me everything in one place.”

      It allows him to track multiple orders from the same party and ensure all orders for members of a large party are prepared and served at the same time.

      “I love that we can customize orders to people’s preferences,” he said. “We can go in and use the modifiers to note whether someone wants their order with or without Grub Sauce.”

      Adam also appreciates that he can check business performance at any time with intuitive reporting.

      Looking forward, Adam has dreams of escaping the Midwestern cold. He aims to keep customers happy so he can work in Indiana from April to September, then head south with the truck for some warmth.

       

      Advice for entrepreneurs:

      • Decide what you can give: Ask yourself: How much can I put in? “If you’re willing to put in the 80 or more hours a week now and have faith that it will pay off later, then business ownership might be for you. But you have to be a go-getter.”
      • Get resourced: If you need help, find it. “I had every intention of doing this on my own. Then I had my first few events and said, ‘O.M.G., I need someone to help.’” That’s when Mom joined the mission.
      • Use every skill: Business owners need to be resourceful. Adam is a model for what it means to draw from every part of your background — tech, construction or prior business ownership — and put it all to work.
